So, my ebay purchased special design wheels arrived today and the rear set have 305/30/19 tyres on them. I'm currently running 295/35/19. Is there a material difference?

I've checked the wheel codes and they're the right offset for 997 C2S - will the 305/30 tyres cause any issues? I can't see it myself but....... just checking :?:

I had those on my C4S and there were no issues but that was a wide bodied car.

No issue at all - indeed it is actually exactly as they should be. On the 997.1 the default tyre size was 295 unless you opted for the Sport Design wheel, which came with 305. Either size is actually fine on any 997 rear rim up to 11" wide (11.5" or 12"s shouldn't really have 295s).
